Is there a way I can see which assets have been viewed by the sales team at a User level not a User Group level?

  When viewing the User Analytics tab within the Content Reports, you can search & select a User from the All Users Chart located at the bottom of the report.
  This will open a detailed view on that specific User where you can see which assets the User has viewed.

  Alternatively, you can access these Content User stats from the User page. Within the User tab, select the User you want to see in further detail, then click the activity icon in the User detail panel. This will open a User Stats page, including the same information listed above.
